MOM'S CARAMEL CORN & LET'S TALK

Whoop Whoop, ready for inspiration inside the kitchen galore with this month's recipe sharing theme for Let's Talk with Momfessionals Andrea and Erika! Not only do I have "The" recipe for the delicious caramel corn that my sweet mama so graciously decided to share with you little pretties but also a couple requested memorable recipes on 
this all fine Fall Day!!!!

A week ago Friday, in my Friday Favorites, I told you how it is tradition that every year my mom makes her fantabulous caramel corn and I hoard and hide it as to indulge in it all my myself. She makes it in fairly small batches and that is what makes it so fresh, crisp and never sticky. Kids, I have been known to eat the whole container full in one setting. Husband caught onto me this year...sorry babe.

Ya know, that is what I love about recipes, especially in the Fall and Cold months, there is just so much darn love that goes into them and I feel it makes them extra good.

So besides having the honor of sharing Mom's Caramel Corn Recipe with you today, I'll share a couple more from posts past that have sweet sentimental meaning behind them. They are also two that would work stupendously for your Thanksgiving get togethers coming up in gasp...3 1/2 weeks!! 


What you'll need for the Caramel Corn

MOM'S CARAMEL CORN
INGREDIENTS
3 1/2 quart (14 cups) unsalted popped corn
1 cup brown sugar
1/2 cup white corn syrup
1 stick butter
1/4 teaspoon baking soda
1/2 teaspoon vanilla

DIRECTIONS
Preheat the oven to 250 degrees. Combine the brown sugar, corn syrup and butter in a medium saucepan and bring to a boil. Boil for 5 minutes. Remove from the heat and add the baking soda and the vanilla. Stir until very foamy. Put the popcorn that has been popped in a roaster or very large pan. Pour the syrup mixture over the popcorn and stir until coated. Bake for 45 minutes total, stirring well after every 15 minutes. Dump onto waxed or parchment paper to cool. Store in an airtight container.

FRIDAY FAVORITES....OCTOBER DON'T GO

I love October, I do NOT want to see it go. While the next couple months bring the joys, sights, sounds and warmth of the holidays, October is my jam, the "it" month for football, all things Fall and not yet too cold temps. I love the leaves changing and all my beloved pumpkin spice so as we usher out October, you may hear a boohoo or two from Indiana.....it'll be me picking an apple in my plaid shirt and herringbone vest. Enjoy this last October weekend 2016 to the fullest friends!!!

1. Caramel Apple Goodies
I am still so in love with caramel and apples and all things related to the two. A couple weeks ago I made the Caramel Apple Cookies with the yummy frosting. Here are two more caramel apple related treats.

These are not just your traditional wrapped Kraft Caramels, these have yummy sea salt thrown in. A favorite snack is a fresh honey crisp sliced up where I alternate bites of apple and a bite of a caramel...delicious and not as messy as caramel dip, although I love that stuff. The caramels also come in Caramel Apple flavor.

CROCKPOT CHUNKY WHITE CHICKEN CHILI......SOUPS ON!


Can you believe, up until a few years ago I had never heard the term "white chili?" I was always used to your old fashion tomato based version chili that my mom so lovingly prepared every winter and served up with saltines or grilled cheese. Staying away from beef more often, even though now in my regular chili I usually use ground turkey and some good ground sirloin, I needed to start making chili recipes with chicken. Chicken and regular red chili bases just don't jive, so a yummy white-based sauce with the chicken broth, canned cream of chicken, and beans is perfect and no white flour needed. I especially love this one, for it is cooked in the crockpot on low all day and has a tad bit of Mexican flair. It makes for great versatility other than just heating up bowls of it. I like dunking tortilla chips in it or crushing them for the top.

Another thing I like to do wth the leftovers, is put inside tortillas for either chicken soft tacos or grill in the skillet for quesadillas. Just add some cheese fold over and heat on both sides in a lil olive oil til a little crispy, then cut in 3rds and add some sour cream, salsa, etc...


What you'll need

CROCKPOT CHUNKY CHICKEN CHILI
INGREDIENTS
1 1/2 lbs uncooked chicken breast (can be frozen) 
2 – 15 oz cans of white beans (drained)...(I like Randall Great Northern Beans)
1 package taco seasoning
1 – 7 oz can of chopped green chilies
1 can cream of chicken soup
1 – 14 oz can of chicken broth
2 Tsps good chicken base
Optional:
1/2 cup sour cream (I used low fat)
Fine shredded cheese (I used Colby-Jack)
Tortilla chips 

DIRECTIONS
Place chicken in the bottom of the Crock Pot.  Add 1 can beans and the green chilies. Mash the other can of beans with a potato masher and add to a medium bowl. Add the broth, chicken base, taco seasoning, and cream of chicken; mix well and pour over the top.  Cover and cook on low in the Crock Pot for 8-10 hours.  Before serving use a fork to break up the chicken.… the consistency should change from brothy with chunks of meat and beans to a very thick and even consistency. If desired, Add sour cream and stir until mixed. Add shredded cheese, a and either crushed chips on top or I like to dip my chips in it. YUM!




Another soup to please the tastebuds and soothe the soul!! Gotta love it!

FRIDAY FAVORITES...DO SOMETHING "FALL" EDITION

Happy Fall Friday loves. We have a bye week before football sectional starts so Mr. Nine and I are going to be doing all things Fall and I am so excited for all we have planned and a lil downtime from all the recent hustle, bustle and work stress. Added to the stress was my lost Fitbit last night. The Mr. and I looked for it for hours (it's a clip on)...not easy when you're addicted to it like bees on honey. I'm having FitBit withdrawals today and will need a Baileys and coffee stat! IN a Target sayings MUG perhaps! Hope your weekend is grand and includes a little something Fall!!! It's going waaaay too fast, that is for sure. I actually saw a Christmas commercial on Monday. What????

1. Mom's Caramel Corn
You know I love tradition and a great Fall one I have is eating my mom's caramel corn. Once a year in October, she makes up a batch of this perfect and amazing caramel corn and I dig into tub of it she brings me and eat it all my myself. It is never sticky, always crisp and just the right amount of sweet. No one can make caramel corn like my mom. She finally shared the recipe!

2. Daisy
While it is not my favorite thing that she has been sick lately, she is our favorite doggie EVER. She had a rough week and has her paw slung up from a hip out of socket so she is 3 legged right now and has to have a towel to hold her up to go to the bathroom. My sweet mom is going to babysit so please pray all goes well for Daisy these next few days.
