MY FAVORITE APPLE & SPINACH SALAD


When I started to make this salad, which I’ve loved for years, I realized something. I am always concocting up new recipes and sometimes forget to make my tried and true staple recipes that I’ve been making for years to share with you all here on the Blog. This is a seasonal salad for me that I only tend to make In the Fall season.....AND I LOVE IT!! And you truly could eat this all year round.

The homemade dressing is the star of the show here and of course I like to use my favorite apple: The Honey Crisp!


What you'll need


Apple Spinach Salad
INGREDIENTS 
1 pound Baby Spinach or Spring Mix
3 sweet apples halved and sliced ( I like Honeycrisp or Gala)
1/4 cup Feta cheese, crumbled
Handful Dried cranberries or crasins (I had a cranberry and nut blend)
1/4 cup Candied pecans and/or almonds 
Dressing
3/4 cup olive oil
3 Tablespoons apple cider vinegar
3 Tablespoons white vinegar
3 Tablespoons sesame seeds
1/4 cup white sugar
3/8 teaspoon paprika
S&P to taste if desired 

DIRECTIONS 
To make the dressing, pour all into a salad shaker or jar and shake well, or whisk all ingredients together in a bowl. Assemble salad ingredients and top with dressing, toss and serve!

  3. Yum!! I like trying new salads :) Have you ever tried goat cheese with it? I've had a sad with apples before and they had goat cheese on it and it was good!!

  10. This looks so delicious and yes it seems seasonal, but would be delicious anytime of year. I like the ratio of apple to spinach...looks like a lot of apple. YUM! Thanks for sharing an oldie but goodie. XOXO

  15. I love a good salad with apples on it! And I eat an apple every single day so this would be a great way to change it up instead of eating it plain.

  16. I make almost the exact same thing regularly! I use raisins instead make a different dressing (honey, mustard, vinegar, and oil). A lot of times I will make chicken in the crock pot or buy a rotisserie one and make it a giant dinner salad. So good!!

  18. Oh yes that dressing does sound like the star! Honey Crisps are my favorite too but I've been liking Envy a lot lately as well. This is the perfect fall salad. Yes please!!
