FRIDAY FAVORITES...WHERE DID MARCH GO?

My goodness this month flew by and I am so glad because there is so much goodness to get to next month! I hope you’ve had a great week and Spring is slowly but surely arriving!

1. SUNSHINY DAY DATE
If you followed along with my stories this past weekend, you saw that Mr. Nine and I had the best date day! Finally a sunny day and temps in the 50's. There aren’t tons to do in our immediate area, but if we drive an hour or more north to the lake Michigan area, there are so many breweries, markets, wineries, distilleries and local sourced food restaurants to show you a great and yummy time.

Great Neighbors, Great Friends
As you know, we just moved into our house a little over a year ago and there’s only like 28 houses and you just don’t see your neighbors as much as we did in our old subdivision. However, I am blessed to have an Uber cool one to call friend who lives with her husband and most precious little girl (who turned 5 yesterday) in the first house which is one we admired when we decided to build in there.
So nice to have a sweet neighbor with a similar outlook on life! We enjoyed a sweet lunch together at the house on Tuesday.

JUMPING AGAIN and WUW

Yes, it’s another jumpsuit and they are not stopping anytime soon! I absolutely love this one because I feel like it could really encompass spring, summer and fall! I love that I’ll be able to put a short sleeve white tee under it and even a tank top this summer and while I have sandals on here, you could totally do boots!

I could not resist throwing on one of my favorite hats with it but when I looked at these pictures I started asking myself, do I look like a state trooper or Smokey the Bear, lol?

American Eagle has really been killing it with the jumpsuits lately but it’s hit and miss! I ordered three jumpsuits online and they’re all perfect and you will see them here on the blog but I went into the store the other day and tried on two more and they were both horrible! It is definitely hard to find a good fitting jumpsuit but when you find the perfect ones, you fall in love!

Oh, and I LOVE these wedge sandals as the base is wood and not espadrille!

YOU can Prevent Forest Fires!

BOK CHOY, CHICKEN & MUSHROOM STIR FRY

Have I got a healthy and flavorful recipe for you! My sister-in-law gave me this recipe and uses it as a side dish but I decided to add chicken and make it a main dish & serve it over rice for everyone but me. I was just fine with what was in the skillet sans the rice but I know the rice added a hearty bottom for the guys in the family. For those of you that don’t know, bok choy is nice and mild. It’s the sauce that gives it so much flavor. I had never heard of the shoaxing rice wine but found it easily on Amazon. It’s a wonderful rice wine that is red in color. Here’s the great thing about this recipe, it makes four servings and each serving only has about 150 cal.

What You'll need

Bok Choy, Chicken & Mushroom Stir Fry
INGREDIENTS
1-pound bok choy
2 boneless chicken breasts, cooked and shredded or diced
1 tablespoon olive oil
2 teaspoons minced garlic
1/8 teaspoon ginger
6 oz. button or Cremini mushrooms, chopped
2 tablespoons Shaoxing rice wine* (BUY HERE)
1 tablespoon soy sauce
2 teaspoons toasted sesame oil
1/8 teaspoon each of salt and pepper

DIRECTIONS
Trim the bases of the bok choy and separate leaves rinsing and drying carefully. You could use a salad spinner for this. Heat a large skillet or wok over medium high heat until hot. Add the olive oil, garlic and ginger. Stir and then immediately add the mushrooms and stir fry until they begin to brown, about two minutes. Add in the rice wine and cook for another 30 seconds. Add the bok choy (leaves & stalks) and cook, tossing until the leaves begin to wilt, about one minute. Add in the soy sauce, sesame oil, salt, and pepper tossing often until the bok choy is tender crisp about another two minutes. Add in your shredded chicken, toss to coat and serve immediately.

Before the chicken... Boo Choy kind of wilting in the pan

HAPPY TASTY TUESDAY

EASTER TIERED TRAY

It’s baaaaack! Filled with bunnies and spring cuteness! And do you notice anything else? I got a new tray! I love the one I had, but with the colors of my house, I was just really craving to get a white distressed one so this new one is exactly like the old one and now I have two decorate, oh no! AND this tray now comes in black too!!

Back view... I just love the pink bubble glass from Hobby Lobby

Those pink and green things are little napkin rings I used as mini wreaths.

Remember I used the little pink easel and stands for the Mini Cadbury Creme Egg Cupcakes

I just stuck a napkin ring inside my mini tobacco basket wreath.

I took some of the felt bunnies off the craft clothespins and used double sided tape to sick on on the vase and one on the easel.

I’m actually really happy that Easter is later this year so this goodness can stay out longer. I’m just loving all the spring colors and to think I originally wasn’t going to decorate for Easter.
Now, what are your thoughts? Do I decorate it for Memorial Day and leave it up to Fourth of July or do I do a summer theme?
