BAKED PENNE PASTA ALFREDO



While we like to eat a little lighter in the summer, there are still times you need a hearty meal. Like on a Sunday when your family is working their tales off around the house! It's nice to have a big pan of something yummy to feed them! I recently fed this Baked Penne Pasta Alfredo to my hard working boys and it was met with rave reviews and lots of "mom, you can make that again?....soon!" I took some to work the following day for my lunch and it was even more scrumptious!

It may sound odd but using both the red sauce and Alfredo's sauce in this amped it up to such a great notch. I served this with twisted bread sticks, pizza buns and next time will throw in a nice salad with fresh summer veggies.



While I was taking a tad bit of a break on Tasty Tuesday's this summer, I knew this was a winner too good not to share! I hope you and your family enjoy it as much as we did.
I made this a wee bit healthier wit the ground turkey and I always use Protein Plus or whole wheat pasta's.

What you'll need

Baked Penne Pasta Alfredo 
Ingredients
1 lb Italian seasoned ground turkey
2 16 oz jars of pasta sauce (You'll only use 1 cup of the 2nd jar)
1 16 oz jar Alfredo sauce (our favorite is Bertolli)
1 lb penne pasta 
1/2 cup sweet onion, chopped 
1 teaspoon minced garlic
1 1/2 cups shredded Italian blend cheese
1 1/2 cups shredded mozzarella cheese
1/4 cup Grated Parmesan cheese (optional)
Parsley
Italian Herbs blend

Directions
Preheat the oven to 350 degrees. Spray a 9x13 inch pan with cooking spray. Make the pasta as directed, drain well til almost dry and rerun to pan, stirring in the jar of Alfredo. Cover pot until ready to assemble. 

In a large skillet, cook ground, onion and garlic til meat is not longer pink. Pour in 1 jar plus 1 cup of the pasta sauce and mix well. 

Pour the Alfredo covered pasta into the pan, spreading evenly. Top with the meat sauce. Sprinkle the cheese evenly, then sprinkle some parsley and Italian herbs. If desired, sprinkle with the Parmesan cheese. 
Cover with foil and bake for 15 minutes. Remove foil and bake another 15 minutes. Remove from oven and let stand for 10 minutes before serving.

  7. OMGosh, Andrea! I've actually made this before and we love it!! It makes a great freezer meal, too! Now you got this Carb Queen craving and needing a pasta fix and I haven't even had my Diet Coke yet! Ha! Happy Tuesday!!

  13. Looks like another one I'll need to make soon, I think my boys will love this, my shorts not so much, lol!!! The good news is that I have gotten so good at cooking for them and not eating myself but this one sure is tempting. Looks like it makes plenty too which they;ll love for lunches this Summer!   17. My mouth is seriously watering, Andrea! Pasta is my very favorite and we haven't had it in a few weeks (trying to cut down on the carbs!) but seeing this, I want to go home and make it for dinner! I will keep this in mind for our post-limited carbs diet. Looks so yummy!

  25. Yum- I've seen the mixing of red and alfredo sauce in a few recipes and have yet to try it, but having eaten your recipes before, I know it'll be a winner! Baked ziti is always so yummy- we call it mostaccioli in our house since my mom's from St. Louis. So excited to go eat a ton of Italian in STL in a few weeks! Hope you're having a great day!
