STRAWBERRIES AND CREAM CROSTINI'S

Holy YUM! I have not shared a recipe in a while, because, let’s face it taking pictures of food is exhausting and if it’s something hot you’re making for your family, it’s cold by the time mom gets around to eating it, LOL! However, It’s strawberry season here in Indiana! So, I must share because these are so pretty and delicious! I have created the perfect little strawberry delights! These Strawberry and Cream Crostini’s would be perfect for a brunch, having the ladies over for tea, as an appetizer or heck, I had mine for lunch, etc! And so easy!!

What You'll Need

Strawberries and Cream Crostini’s
INGREDIENTS
16 Baguette Slices
8 oz Cream Cheese
8 oz Ricotta Cheese
1 teaspoon Vanilla Extract
16 Baguette Slices
2 cups sliced strawberries
Honey
Fresh Mint, opt. for garnish

DIRECTIONS
Mix cream cheese, ricotta and vanilla until smooth. Toast baguette slices. Top each slice with cream cheese mixture. Top each with strawberries, pressing down into cream. Top with a drizzle of honey and fresh mint if desired. Can be made into 8 sandwiches as well.
