LITTLE IRISH GIRL COOKIES and a Blogiversary




I could not let the Luck O' The Irish holiday coming up this month go by without posting a little festive treat! Hence these green, Little Irish Girl cookies were born. Irish runs deep in our blood, our football blood that is...being tried and true Notre Dame Fighting Irish fans, I get extra excited with anything green and the name Irish attached.

I've been blogging for a year today. Blogging has changed me life for the better. The blogging community is so kind and supportive. Blog writers and readers alike truly want to lift others up. That is so inspiring, especially in today's world. Sometimes the people in our lives just don't get it, but we cyber pals do and whether or not we ever get the pleasure of meeting face to face, our lives are richer knowing each other. So much of life today is about social media and being told what to do, say, eat and wear but to bloggers, we just want to tell you we're happy with what you have to say, style or create; we support you and we lift you up in love and mutual understanding. Thank you for being you!

Now, let's get to these lil green nuggets of sweetness....


I have made several variations of the beloved Thumbelina cookies like these. I truly think these turned out the best...they literally just melt in your mouth and the frosting is so light and fluffy. The key is whipping the butter with your beaters for at least 2-3 minutes.

What you'll need


LITTLE IRISH GIRL COOKIES

Ingredients
Cookie
1/2 cup softened Butter
1/4 cup sugar
1 egg yolk, well beaten
1 tsp. Vanilla
4-5 drops green food coloring
1 cup all purpose flour
1/2 tsp salt

Frosting
1/2 cup softened Butter
1 1/2 cup powdered sugar
1 1/2 tsp vanilla
2 tsp. Bailey's Coffee Creamer (Optional) and not the Alcohol
2-3 drops food coloring

Directions
Preheat oven to 350 degrees. Cream together the butter and sugar, beat in egg, vanilla and food coloring. Blend in flour and salt. Shape into 1" balls. Place on ungraded cookie sheet. Dent center of each ball ( I used the end of a wooden spoon). Bake 5 minutes. Remove from oven, dent again, bake 8-10 minutes longer. Cool. Beat all frosting ingredients until fluffy. Fill cookies with green tinted frosting. Store in airtight container

  31. These look so good! I should make these for the kids, I always surprise them with St. Paddy's Day treats and a breakfast along with a scavenger hunt. I really was going to try to get out of it this year, but they've already mentioned it a thousand times... ahh, I guess I better do it! :) And, at first I thought these had the Bailey's alcohol in them LOL and I was like, ohhh YUM and then I saw it was the creamer. :)
