CRUSTLESS SPINACH QUICHE

I am not a crust girl, never have been, never will be! However, I am an egg and cheese and veggies girl so a Crustless Quiche had my name all over it and boy did this one ever delight the taste buds! Love serving up a delightful quiche with some fresh berries and I have been know to add in a mimosa or two as well. Love how pretty it is with all the antioxidant rich spinach, red pepper, mushrooms and onions.
Yum

CRUSTLESS SPINACH QUICHE
INGREDIENTS
½ cup onion, chopped
1 cup fresh, sliced mushrooms
¼ cup red pepper, chopped, optional
1 tablespoon olive oil
1 (10 oz) package frozen, chopped spinach, thawed and drained
½ cup finely chopped ham
6 eggs
3 cups Monterey jack cheese (*note, the last time I made this I only used 1 1/2 cup cheese and used 2% Colby Jack....was still just as good and 1/2 the calories)

DIRECTIONS
Preheat oven to 350°. In a large skillet, sauté onion and mushrooms and if desired, red pepper in oil until tender. Add spinach and ham; cook and stir until the excess moisture is evaporated. Cool slightly. Beat eggs; add cheese and mix well. Stir in spinach mixture and pepper; blend well. Spread evenly into a greased 9-in. pie plate or quiche dish. Bake for 40-45 minutes or until a knife inserted in center comes out clean. Yield: 8 servings.

Before baking

Nice and golden, try not to over back so it is light and fluffy.

This is what I'll make you for breakfast when you come to visit! And maybe a sweet treat too!

  21. YUM! I love quiche... though I have to admit I do enjoy my crust. I have made it crustless once or twice in a pinch but I do love it loaded with vegetables. Pinned.

  22. This looks and sounds delish. I am a big fan of crustless quiche being gluten free. And, subbing with dairy free cheese is easy too.

  23. I love making crustless quiche! It's the only kind I make and it's so much healthier for you without the crust too! This looks so tasty!

  24. That looks fantastic! I've never made a crustless quiche, perhaps because I like the crust WAY more than the egg part, hehe.

  25. My mom used to make a killer crustless quiche and I completely forgot about it. I shall add this to my list for the weekend!

  26. I make something similar. The crust is always difficult to get right, and now we count carbs so by skipping it, we make this a healthier meal.

  27. I love how easy quiche is to make and all the different combinations of veggies and meats that can go into it based on your preferences...I've always cheated and used the frozen pie crusts to make my quiches even though your version is more healthy. Now I'm craving quiche which will probably be on my weekend baking list! xo Emily @ Martinis & Bikinis

  28. I love crustless quiche! Sometimes I add a bit of mustard to the bottom of the dish too- sounds gross, but it is good! Your recipe is so healthy and full of veg- love that!

  30. Delicious dish and I'll take one please! I am in between whether I like a crust or not. If it's crunchy then I am game but if it isn't and just doughy then count me out! Lol 😀
