CHEESEBURGER IN PARADISE SOUP


Oh, my stars, this was sooo good! There’s only 2 things that would’ve made it better. If I was eating it in a Tropical oasis and Jimmy Buffet was singing Margaretville. Ok, maybe a Margarita itself would make it even better too. Can you tell I’m ready for Summer? However, since old man Winter is not releasing his grip anytime soon, the soups are still in full force in the Nine household. And they truly don’t get much better than this. The youngest said it rivals his beloved Ham Chowder

What you'll need

CHEESEBURGER IN PARADISE SOUP
INGREDIENTS 
3-4 medium russet potatoes, peeled and cubed
1 small carrot, grated
1 small onion, chopped
1 cup water
1 cup beef broth
1 Tablespoon plus 1 teaspoon beef base granules
1 teaspoon minced garlic
1/8 teaspoon ground pepper
1/8 teaspoon salt
1 pound ground sirloin
¼ pound sliced fresh mushrooms (optional)
2 Tablespoons butter
2 ½ cups skim milk
3 Tablespoons all-purpose flour
1 cup mild shredded Cheddar Cheese
½ cup Stadium Cheddar Cheese (in a jar)

Cooked, crumbled Bacon

DIRECTIONS
In a large pan or Dutch oven, bring the first 9 ingredients to a boil, reduce heat; cover and simmer for 10-15 minutes or until the potatoes are tender. In a large skillet, cook the beef sirloin, mushrooms and butter over medium heat until the beef is no longer pink; drain. Add this mixture to the soup. Stir in 2 cups of milk and heat through. In a small bowl, combine the flour and remaining milk until smooth; gradually stir into the soup. Bring to a boil; cook and stir for 2 minutes until thickened. Reduce the heat; stir in the cheeses until melted. Garnish with bacon.

  6. This part of the year where it teases us with a warm day only to turn cold the next is hard. This soup will definitely make it better! Though I do like the beach and margarita idea! I am ready for a nice long and warm spring!

  17. Wowzers! This sounds like something that shouldn't work ... but it looks like it does, and some! We had Leftover Bake today, small bits of turkey curry, gnocchi spinach bolognese and sweet and sour red cabbage - should have tasted yucky, but it was heavenly. Hugs, my pretty, x.
